Mary’s Turkey Tetrazini

 Serves 6-8

 2 c. turkey cubes or pieces

1 lb. sliced mushrooms, any variety or combination

½ to 1 c. grated cheese (parmesan or romano)

1 pkg. cooked (al dente) egg noodles, drained

2-3 cloves garlic (and a chopped shallot, optional)

4 Tbsps. butter or margarine

1 Tbsp. olive oil (to prevent butter burning)

½ tsp. paprika

¼ c. fresh parsley (optional)

Salt & pepper to taste

 

Sauce:

2 Tbsps. Sherry AND

3 c. white sauce OR

1 can cream of mushroom soup + 1 pint cream or sour cream

 

In Dutch oven or 5-qt. casserole pan, saute mushrooms and garlic lightly in butter and oil; stir in turkey, spices, parsley, half the cheese, sauce, sherry, noodles.  Top with remaining cheese; bake in 450-degree oven until cheese in nicely browned, about 20 minutes.
